Prawn and Mango Salsa Taco's Recipe

Ingredients

500g Peeled Thawed Prawns

30g Taco Spice Mix (Old El Paso)

10 Mini Tacos

2 Avocados

2 Limes (juiced)

1/2 bunch Coriander

1 Mango

1 Tomato

1/2 Cucumber

1/4 Red Onion

1 Red Chilli (Optional)

2 Tbsp Kewpie Mayo

2 Tbsp Sweet Chilli Sauce

1/2 Tsp Smoked Paprika

Salt and Pepper to taste

1 Tbsp Extra Virgin Olive Oil

Method

Mango Salsa

  • Dice the mango, tomato, cucumber, red onion and chilli

  • Mix together with the juice of 1 lime

Avo Smash

  • Smash the 2 avocados in a bowl

  • Add roughly chopped coriander and the juice of 1 lime and combine

  • Add salt and pepper to taste

Sweet Chilli Mayo

  • Combine the mayo, sweet chilli sauce and paprika in a bowl and set aside

Prawns

  • Combine the prawns and taco season in a bowl

  • Preheat a pan on medium/high heat with olive oil

  • Add prawns to the pan and cook until both sides turn white and seasoning will turn crispy (roughly 8-10mins total)

Assemble

Time to eat! I serve my tacos with a bit of everything. You can top it off with any left over coriander and a squeeze of lime.
